weekday jam & 4 year old EMily

That salad. Do you see it? Are you impressed? I am the child that cringed when asked to "wash the lettuce for dinner" each night. I hate prepping lettuce, but I always love eating a good salad. Hence  now buy the pre-wash/ready mix stuff from Sams Club. Don't judge.

Last week, I hardly made a single salad. So, I reluctantly tried to make up for it with this one. Totally loaded with goodness, and by goodness, I really mean the avocado and the candied walnuts and almonds. See the purple stuff -- I'm trying to sneak in disguise as much red cabbage as I can. A) Because I paid money for it, so we better eat it. B) My mom says its super healthy for you. Not sure why, but I'll take her word for it. Same philosophy goes for the carrots (and you know we only buy the 5lb bag from Sams Club, so carrots everything for weeks for us.

Candied walnuts and almonds. Rookie mistake was NOT doubling the recipe when I made them. And other rookie mistake was simply making them, because holy cow, they are good. I think I just accumulated another roll on the waist line because of them. Do you want the recipe? You don't if you got a weight watchers lady breathing down your back, but if you don't, you'll want it.

1 C Walnuts
1 C Slivered Almonds (its what I had on hand, and didn't want to use ALL my walnuts)
1/4 C Brown sugar
1/4 C White sugar
pinch of cayenne pepper
pinch of nutmeg
1/2 tsp Salt
1/2 TBSP Cinnamon
1 Egg white

Mix egg white with walnuts and almonds. Mix dry ingredients separately first and the combine with walnut/almond mixture. Bake at 300 for 40 mins, but mixing at the 20 min mark.

Monday was President's day, which is a holiday for EVERYONE in the world but those that work in the health care world. I only worked half-a-day, because thats what a millennial would do. After I got back, we hiked the Y with another couple down the hall. Whitney is graduating this April and had never hiked the Y, so it was like, you know, necessary. Dang, it was a good fitbit day. 110 "stairs" climbed. 14K steps walked. And as a result of the days hike, we ate dessert for dinner (kinda) guilt free.

I picked up the violin again after a mid-century of not playing. yikes. And i'm starting to think I really should have brought my stand to Provo with us. 

On Sunday, I got this urge to go through old files.  Mostly I just like looking through old pictures. Check out that BYU sweatshirt and athletic shorts. My daily attire for most of elementary school. There aren't many that get to have five girl cousins within months of each other. This was taken at our Lewis Family Reunion in Nauvoo, Illinois in 2004.

And the next three pictures are me as a 4 year old making ANYTHING adequate sleeping places.
Hows your top stair, is it as comfortable as mine? Anything is comfortable with that thumb suck. While reading my 5th grade autobiography (that, lets be honest, my mom probably wrote), it says as a baby I loved my pacifier so much, I tried to put two in my mouth at once.

Long live the thumb sucker!

If anything, this probably just gives further evidence I was the youngest of 9. Just like there wasn't room at the kitchen table for me to eat until I was 11.

There isn't much difference from when I was 4 to 20. Sleeping in the MTC. That must've been some spiritual lesson.

  3. Your pictures! Never seen them before. I can't believe you could sleep anywhere like that. So funny! I love that all the missionaries in that picture were sleeping, too! Yummy salad! I cringed too when I was given salad prep growing. I was convinced I was the only child that mom asked to make the salad night after night! I love salads but don't like the prep work involved. I discovered a really yummy thai salad recipe recently that you roast almonds with soy sauce...better than I expected! I could drink the sauce!
