African Chicken Peanut Soup

After a winter of soup every week, I'm just kinda over it. But Bronson requested soup the other night, and this one is the only one I'm willing to eat. Its got two of my favorite ingredients: sweet potato and peanut butter.

Notice the plastic spoon, yeah I should probably do my dishes.

In a large soup pot, saute in olive oil: 
1 sweet potato peeled and diced
1/2 onion, chopped
1/2 red bell pepper diced (I used green this time around and no one died and it tasted just fine)
2 cloves garlic

Add and cook 10 mins: (although I simmer for quite a bit longer to make sure the sweet potatoes are cooked)
2 c. cooked chicken breast, cubed (optional)
1 c. Salsa (definitely not optional)
1/2 tsp cumin
16 oz chicken broth
2 packets of chicken/rice soup (add 4 cups of water per packet) 

Add and heat through: 
1 can black beans, drained and rinsed
1/3 cup chunky peanut butter
1 cup cooked rice (optional)
