Candied Walnuts & Almonds

If you have talked to me lately, its probably come up in some sort of conversation how much I love candied nuts. Its like on the same level of my love for a good handful of semi-sweet chocolate chips.
The first time I made these (two weeks ago) I got this heavenly aroma of the holidays in my apartment and luckily the taste matched the smell. They were good. Like the real kicker of the salad.

They are so simple -- and quick! I always buy my nuts in the bulk section at winco and keep them stored in my fridge.

I've made these two different ways... one healthy and one not so healthy, but equally tasty.

Healthier Recipe:
1 Cup Walnuts
1 Cup Slivered Almonds
1 1/2 TBSP melted coconut oil
2 TBSP sugar
1 tsp Cinnamon
Pinch of Cayenne Pepper
Pinch of nutmeg
1/4 tsp Sea Salt
1 TBSP maple syrup

Mix well and spread on siplat or parchment paper. Bake at 400 degrees for 15 mins. Let cool and store in air tight container in fridge.

Less healthy recipe: 
1 Cup Walnuts
1 Cup Slivered Almonds
1/4 Cup brown sugar
1/4 Cup white sugar
1/2 TBSP cinnamon
1/2 tsp salt
pinch of cayenne pepper
1 egg white.

Mix the egg white with the nuts. Mix all dry ingredients together before combining with the nuts mixture. Bake at 300 degrees for 40 mins, but mixing them at the 20 min mark.
