Chocolate Chip cookie granola



I made these twice in two days. I mean they are kind like the "stop whatever you are doing and make these right now," type of food. I think they look like they are healthy, but not really sure I can justify that with the amount of JIF peanut butter and chocolate chips involved. either way, they are WORTH gaining weight for. Whenever we need a quick snack, its these guys -- not white cheddar popcorn that I so affectionally love, but these are even better.

Update: after making them for quite some time now, I've made my own adjustments.
I've added chia seeds, crushed up slivered almonds, alittle extra flax seed meal.

Recipe:
1 Cup Oats
1/3 Cup Flaxseed meal (*bulk section at WinCo is a great place!)
1/4 Cup Honey
1/2 Cup Peanut Butter (I prefer chunky)
1/2 tsp vanilla
1/2 tsp cinnamon
1/2 Cup mini chocolate chips

Mix and mix until everything is well combined. To stretch it out alittle longer, I usually add chia seeds, crushed up slivered almonds, and if its too dry i'll do a TBSP at a time of maple syrup until I get the consistency I want. Store in air-tight container in fridge.

Update: I've stopped rolling this mix into balls -- maybe part lazyness, but mostly because I like to sprinkle it on top of my yogurt as if it were granola.
