Homemade Broccoli Pesto Pizza








Cooking without a recipe is paralyzing for me. I need a guide, a plan, instruction. Basically, I need alot of help in the kitchen. The one time I tried to "throw things together," I ended up clogging our disposal, which nearly broke our dishwasher. #lessonlearned

When I made pesto pizza, it was a) because I had extra dough and b) my basil was almost out the door. Okay, it  75% of it was so I had to make do.

It was a moment of "throw it in the blender and pray it comes out decent."

Dough - find recipe here. I can't perfect this any more than it is. So use it, religiously. Don't even consider looking for a different one. Its a cinnamon roll dough recipe, so if you don't spread it thin, it will be a little thick, but I'm okay with that.
I made a traditional pesto:

Broccoli Pesto:

  • 2 cups Basil (or at this point, everything that salvagable)
  • 2 TBSP garlic
  • 1/4 cup walnuts (ain't nobody got money for pine nuts)
  • 1/4 cup parmesan cheese
  • pinch of sea salt
  • 1/4 cup olive oil (or vegetable oil, no one is REALLY going to know) * add more as needed
  • however much broccoli you want (or in my case, needed to use up before it went bad, lets be real). 
  • Optional: Sprinkle slivered almonds -- i like my food to have a crunch to it 


Blend together.

Sprinkle corn meal on the counter to roll your dough out on. You could use flour, but corn meal is more my jam. Indent a circle around the dough to make a pseudo crust.

*optional: pre-cook dough for 3-5 minutes at 400 degrees before adding the pesto and toppings. (I prefer this method.)

Spread broccoli pesto around, top with additional tiny broccoli trees, cut cherry tomatoes in half, sprinkle on top parmesan cheese.

I ground up black pepper on top, alittle salt, some more basil. Never can have too much basil. Cook for 10 minutes, but really, I just pulled up a chair and sat next to my oven with the light on because i was paranoid about it burning.
